I’m sure you all remember my “Shrimps, Cukes, and Beans” post from March 26, back in feed me kc‘s salad days, when we ironically weren’t really posting about salad all that often.
So of course you’ll remember my statement that this simple salad of white beans, cucumber, lemon, and dill “would be equally delicious with calamari or as a base for seared white fish or salmon.” Well, this week I put that declaration to the test, puttin’ a big ol’ filet of grilled Atlantic salmon over the salad. And you know what, it was even better than with shrimp. So take that, shrimp!
(I’m sorry, shrimp. I don’t know why I yelled at you like that. You’re great, too. You’re really, really great.)
