When Lady Akin cooks, she keeps it nice and simple. In fact, she keeps it Real Simple, pulling many of her dishes from the very magazine promising “12 easy chicken recipes, 58 ways to make your photo frames work harder, and 132 no-brainer tips for saving $4 a year.”
Lady is also skilled enough to improve most of the recipes (here she added currants and upped the herbage), as well as mix and match components to form new creations. This week, she paired a simple chickpea-raisin salad with grilled chimichurri flank steak. It was, indeed, real simple. And real tasty. The steak was perfectly medium-rare, sliced thin against the grain. The chickpea salad was sweet, tangy, and hearty. And the next day, the leftovers made a delicious open-face sandwich.
